margarita!

It was Ferrit's friend Tiara's birthday in the weekend and so she decided to make her some birthday cupcakes. After stumbling across a vegan cupcake cookbook she found the perfect recipe to compliment their mexican dinner.............. Mucho Margarita Cupcakes. Ferrit was a little hesitant when she read the ingredients which included soy milk, lime zest and juice, tequila and vanilla but she thought she'd give it a go anyway.




Ferrit was pleasantly suprised when the little patty pans of mixture puffed up like cupcakes should and wanted to share the successful recipe with her friends so they could all enjoy the delights of vegan margarita cupcakes

Mucho Margarita Cupcakes

1/4 cup lime juice
1 1/2 tsp lime zest
1 cup soy milk
1/4 canola oil
2 tbsp tequila
1/2 tsp vanilla
3/4 cup granulated sugar
1 1/3 cups all purpose flour
1/4 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt

Preheat oven to 180 degrees.
Beat lime juice, zest, soy milk, oil, tequila, vanilla and sugar. Sift in baking soda, flour, baking powder and salt. Mix until batter is smooth (add more flour if mix is too runny). Fill 12 patty pans 3/4 full and bake for 20-22 mins

Icing

1/4 cup vegan margarine - softened
1 tbsp soy milk
3 tbsp lime juice
1 tbsp tequila
2 cups icing sugar

Blend margarine with a fork until soft and fluffy then stir in soy milk. lime juice, tequila. Sift in icing sugar and blend until smooth and creamy. Wait for cupcakes to completely cool then ice, and sprinkle granulated sugar around the edges.
